It’s always hard to finish one class and begin another. Even though I have two more days with my current class, I have begun working on my new class. Truly it makes sense. I have very little to do with the current class. I just have to evaluate their portfolios and their final projects. They have done well and will need to push them out of the nest. They have to go on to the next step. My next class, advanced plated desserts, will need a lot of nurturing in the next 6 weeks. I want them to be creative but not too creative. Consistency is king. The group I start with on Monday already knows me. They know how I work. I think they know my sense of humor and what I like in food. We start fresh though. Like I said, it’s the end and the beginning. It should be fun on all counts.
